Chia pudding is an incredibly simple and delectable brunch option. And this version infused with cold brew is a coffee connoisseur's paradise!   

TECHNIQUE TIP: Are you without a blender? Simply combine the pudding ingredients in a dish using the identical whisking instructions. 

SWAP OPTION: While any milk can be utilized, I personally appreciate the velvety texture that coconut milk imparts to the pudding. You may substitute any fruit for the banana, including fresh cherries. 

Ingredients: 2/3 cup chia seeds, 2/3 cup hemp seeds, 1 cup full-fat coconut milk, 2 cups cold brew, 2 teaspoons vanilla extract, 1 teaspoon cinnamon, 2 medium sliced bananas, and 1 cup yogurt of choice.   

I prefer combining coconut yogurt or vanilla Greek yogurt with 3 Belvita Soft Baked Banana Bread Breakfast Biscuits.   

Blend until smooth and creamy. Transfer the mixture to a covered bowl, jar, or airtight plastic container and refrigerate overnight.   

To make the parfaits, place the banana slices in four Mason jars or bowls.   

Serve immediately or chill, covered, for up to three days.
