Garlic-Butter Chicken Bites


– 1 pound boneless, skinless chicken thighs, trimmed and cut into 1-inch piece – ½ teaspoon salt – ½ teaspoon ground pepper – 1 tablespoon extra-virgin olive oil – ½ cup dry white wine

– 2 tablespoons butter – 3 cloves garlic, grated – 2 tablespoons finely chopped fresh herbs such as parsley, basil and/or dill – 1 tablespoon lemon juice or more to taste


Season chicken pieces with salt and pepper. Heat oil in a large skillet over medium-high heat.

Add the chicken in one layer and cook, turning once, until browned and cooked through, 5 to 7 minutes. Transfer to a plate. 

Add wine, butter and garlic to the pan; cook, stirring and scraping up any browned bits, until reduced by about half, 1 to 2 minutes.  

Return the chicken and any accumulated juices to the pan and toss to coat. Remove from heat and stir in herbs and lemon juice.
