Peanut Butter and Jelly Energy Bites

Delicious peanut butter and jelly energy bites with basic ingredients and date sweetness!   

These 10-minute PB&J protein snacks taste like your favorite sandwich and are easy to make. Keep them in the fridge or freezer for a weeklong fiber and protein snack.   

– 1 cup pitted soft large Medjool dates (about 10-12 large dates) – ½ cup natural creamy peanut butter – 1 teaspoon vanilla extract – ½ cup rolled oats, gluten free if desired

Ingredients  

– ⅓ cup fine shredded unsweetened coconut – ¼ cup (about 1 scoop) vanilla or unflavored protein powder of choice (or sub flaxseed meal or almond flour) – 1 cup freeze dried strawberrie

Add dates, peanut butter, and vanilla to a food processor and pulse until well blended and sticky, 30 seconds to 1 minute. Scrape the sides with a spatula several times, then process again.   

Instructions 

Add oats, coconut, protein powder, and freeze-dried strawberries and process again. The dough may seem crumbly, but if it clings to your fingers, you can make balls.   

Roll 1 tablespoon balls of dough by hand. You can top these with crushed or blended/finely processed frozen dried strawberries. You may wrap them in toasted coconut or drizzle with melted dark chocolate for a sweet treat.   

Store in a silicone ziptop bag in the fridge for 1 week or freeze for 3 months. They taste great frozen too!
