Refreshing Pineapple Kale Smoothie

This vegan pineapple kale smoothie tastes tropical thanks to creamy coconut milk. Add your favorite nutritional supplements, mixes, or toppings!   

– 2 cups loosely packed kale, stems removed (or sub spinach) – 1 heaping cup frozen pineapple – 1 large frozen ripe banana

Ingredients 

– 3/4 cup light coconut milk from the can (or sub whatever milk you’d like), plus more to thin if necessary – 1/2 tablespoon chia seed – ½ inch hunk fresh peeled ginger, optional

Combine all ingredients in a big, powerful blender. Blend on high for one to two minutes, or until smooth.    

Instructions 

Thin the smoothie with additional milk if needed, then combine once more. Makes one serving.
