Salsa-Topped Avocado Toast

Repurpose leftovers from taco night with this simple avocado toast with salsa on top for a quick snack or, by adding an egg on top, use it as a base for breakfast.   

Fresh avocado can be substituted with single-serve packets of guacamole or mashed avocado.  

– 1/2 medium avocado, mashed – 1 slice whole-wheat country bread, toasted – 2 tablespoons fresh salsa, such as pico de gallo – Pinch of salt

Spread avocado on toast. Top with salsa. Season with a pinch of salt. 

1. Toast your bread to your desired level of crispiness. 2. While the bread toasts, mash the avocado with a fork in a bowl. 3. Spread the mashed avocado evenly over the toasted bread.

1. Top the avocado with your chosen salsa. 2. Season with a pinch of salt (optional) and any additional toppings you desire.

– For perfectly ripe avocado, choose one that yields slightly to gentle pressure.

– If your avocado isn't quite ripe, place it in a paper bag with a banana or apple for a day or two. The ethylene gas released by these fruits will help speed up the ripening process.

– For a creamier avocado mash, add a squeeze of fresh lime juice or a drizzle of olive oil.

– Get creative with additional toppings! Chopped cherry tomatoes, red onion, or a sprinkle of everything bagel seasoning can add extra flavor and texture. Enjoy this delicious and healthy twist on a classic toast!
