Sesame Chicken with Broccoli


– 1 1/2 pounds boneless skinless chicken breast, cut into 1-inch piece – 2 teaspoons cornstarch – 1 teaspoon salt, or to taste – 1/4 teaspoon white pepper, or to taste – 2 teaspoons minced fresh garlic – 2 teaspoons minced fresh ginger – 1 tablespoon cornstarch – 1 tablespoon soy sauce – 1 tablespoon sesame seeds, or to taste

– 1/4 cup plus 1 teaspoon cooking oil of choice, divided – 1/3 cup soy sauce – 1/3 cup hoisin sauce – 1/3 cup rice vinegar – 1 teaspoon sambal oelek, or to taste – 2 tablespoons sesame oil – 1/2 cup carrots, cut into matchstick – 1/2 cup sliced shallot – 4 cups fresh broccoli floret


Put chicken in a bowl. Season with salt, white pepper, and cornstarch. Coat chicken well and set aside.  

Heat 1 teaspoon oil in a small nonstick skillet on medium. Stir in garlic and ginger for 1 minute until fragrant.  

Add soy sauce, hoisin sauce, rice vinegar, sambal oelek, and sesame oil. Boil and stir for 1 minute. Stop cooking and set aside.  

In a large nonstick skillet or wok, heat 2 tablespoons oil on medium-high until very hot. Carefully place chicken chunks in heated oil. Stir chicken pieces for 8–10 minutes to lightly brown all sides.  

The chicken pieces will splatter, so use a long-handled spoon or other instrument to transfer them.  

With a slotted spatula, remove chicken from skillet and add remaining 2 tablespoons oil. Add carrots, shallots, and broccoli and stir rapidly for 3–4 minutes.  

Add prepared sauce and heat until vegetables are soft, 2–3 minutes.Stir 1 tablespoon soy sauce into cornstarch in a small dish  

Keep stirring until lump-free. Pour cornstarch slurry into the skillet and mix quickly. Return chicken pieces and heat for 2–3 minutes, stirring constantly.  Remove from heat, sprinkle sesame seeds, and serve hot.
