I grew up eating watermelon rinds because my parents believed in zero waste food. During the summer, I used to watch my father prepare side dishes with watermelon rinds. 

He would make hot ones, non-spicy ones, and I believe even stir-fried some. Yes, he was really daring in the kitchen. However, at the time, I did not respect or think highly of watermelon rinds. 

But as I grew older, I became fascinated and decided to emulate how my father used to prepare his dishes. 

To my amazement, the rinds tasted great! And the tastes worked pretty nicely if brined properly! So that's how I got hooked on watermelon rinds! 

Watermelon is a fairly watery fruit, and its rinds are no exception. This means it's an excellent hydrating food to ingest! You might be shocked to learn that watermelon rinds are incredibly healthy!
